Peach Cobbler
Ingredients:
- 1 stick unsalted butter
- 1 cup all purpose flour
- 2 tsp baking powder
- 1/4 tsp kosher salt
- 1 cup sugar
- 1 cup whole milk
For the peach mixture:
- 4 cans peaches in juice
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1/4 tsp kosher salt
- 1/8 tsp cinnamon
- 1/8 tsp nutmeg
- 1 tbsp vanilla extract
Directions:
- Drain the peaches, reserving 1 can of juice
- Rough chop the peaches from 1 can
- Add peaches to the juice in a saucepan
- Add 1/4 tsp salt, 1/2 cup sugar, and 1/2 cup brown sugar to the saucepan, set heat to medium low
- Once simmering, add the cinnamon, nutmeg, and vanilla stirring frequently for 10m, remove from heat
- Preheat the oven to 350, place the dish in the oven with the butter to melt. Do not burn the butter!
- In a separate bowl, add 1 cup all purpose flour, 1 cup sugar, 2 tsp baking powder, 1/4 tsp salt, and whisk lightly to incorporate and remove lumps
- Add milk and whisk until fully incorporated, do not overwork the batter
- Pour the batter in the hot dish with the melted butter, spread gently to the corners do not stir
- With a slotted spoon, add the peaches. Gently lay them on top of the batter, do not mix
- Add a few spoonfuls of juice to the top, not too much.
- Top with cinnamon and bake at 350 for 40m until golden brown
