Peach Cobbler

Ingredients:

  • 1 stick unsalted butter
  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 cup sugar
  • 1 cup whole milk

For the peach mixture:

  • 4 cans peaches in juice
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/4 tsp kosher salt
  • 1/8 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tbsp vanilla extract

Directions:

  1. Drain the peaches, reserving 1 can of juice
  2. Rough chop the peaches from 1 can
  3. Add peaches to the juice in a saucepan
  4. Add 1/4 tsp salt, 1/2 cup sugar, and 1/2 cup brown sugar to the saucepan, set heat to medium low
  5. Once simmering, add the cinnamon, nutmeg, and vanilla stirring frequently for 10m, remove from heat
  6. Preheat the oven to 350, place the dish in the oven with the butter to melt. Do not burn the butter!
  7. In a separate bowl, add 1 cup all purpose flour, 1 cup sugar, 2 tsp baking powder, 1/4 tsp salt, and whisk lightly to incorporate and remove lumps
  8. Add milk and whisk until fully incorporated, do not overwork the batter
  9. Pour the batter in the hot dish with the melted butter, spread gently to the corners do not stir
  10. With a slotted spoon, add the peaches. Gently lay them on top of the batter, do not mix
  11. Add a few spoonfuls of juice to the top, not too much.
  12. Top with cinnamon and bake at 350 for 40m until golden brown
