Set eggs on the counter 10-15 minutes before you cook them.
Bring a large pot of water to boil. Add a pinch or so of salt (around 1tsp). I use a pot big enough for the eggs to be in a single layer and fully covered with water.
Using a large slotted spoon (I use a cradled pasta spoon), slowly and carefully lower eggs into the water.
Cook eggs for 15 minutes (13 if not at high alt). Turn off burner and let eggs sit another 3 minutes.
Fill a bowl of ice water. Once eggs are cooked, transfer carefully into ice water and then run under cold tap water for a minute or two. Put eggs back in container and let cool before serving.
