Salmone Italiano

Ingredients:

  • 4 (5 oz) salmon fillets
  • 2 teaspoons + 2 tablespoons olive oil
  • Salt and freshly ground pepper
  • 2 tomatoes chopped or 1 (14oz) can diced tomatoes, drained
  • 2 chopped shallots
  • 2 tablespoons fresh lemon juice
  • 4-5 lemon slices (thin)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Directions:

  1. Preheat oven to 400 degrees F
  2. Sprinkly salmon with 2 teaspoons olive oil, salt, and pepper.
  3. Stir the tomatoes, shallots, 2 tablespoons of oil, lemon juice, oregano, thyme, a bit more salt and pepper in a medium bowl.
  4. On a baking sheet, place a salmon fillet, oiled side down, atop a sheet of foil (you will need enough foil to fully enclose the fillet) . Wrap the ends of the foil to form a little boat. Spoon the tomato mixture over the salmon, evenly distributing to all the fillet packs. Then place a lemon slice on top and seal up the packs by twisting the foil.
  5. Bake until the salmon is just cooked through, about 25 minute.
